Healthy Bison Meatloaf Recipe
Ingredients
2 lbs ground bison (buffalo)
3 garlic cloves, pressed or finely minced
2 eggs, beaten
1⁄4 medium sweet onion, finely minced
1⁄2 teaspoon black pepper
1⁄4 cup seasoned gluten-free breadcrumbs
1⁄4 cup grated Parmesan cheese
1⁄2 teaspoon salt
2 teaspoons Worcestershire sauce
1⁄4 teaspoon ground thyme
1 teaspoon oregano
1 teaspoon basil
1 teaspoon sage
Directions
Preheat oven to 350°F.
In a large bowl, combine all ingredients (using your hands works best).
Add avocado oil or melted ghee to a shallow casserole dish.
Pat the meat mixture evenly into the dish/pan.
Add the meatloaf to the pan then turn it over so it has the cooking oil all over.
Bake for 1 hour 15 minutes to 1 hour 30 minutes, or until cooked through.
Serve warm.
Optional: top with a quick sauce made from 2 parts sugar-free ketchup and 1 part balsamic vinegar (you'll need about 1/4 cup total).
