Creamy Cauliflower Soup with Bone Broth

As the colder months settle in, nothing feels more grounding than a warm, nourishing bowl of soup. This Creamy Cauliflower Soup with Bone Broth is not only low in carbs and deliciously creamy, but it’s also packed with nutrients that support digestion, immunity, and overall wellness.

Using bone broth as a base adds minerals and collagen to support gut health, while roasted cauliflower provides a generous dose of vitamin C, antioxidants, and anti-inflammatory compounds. A touch of bacon and green onion adds flavor without compromising the nutrient density.

This soup is perfect for meal prep, cozy dinners, or even a restorative lunch to fuel your body with care and support healing from the inside out.

Ingredients

  • 3 cups chicken bone broth

  • 1 large head of cauliflower, broken into florets

  • 4 strips pasture-raised bacon

  • 1 Tbsp melted ghee

  • 1 small sweet white onion, chopped

  • 4 cloves garlic

  • Pinch of nutmeg

  • 1/2 tsp sea salt

  • 1/4 tsp cracked black pepper

  • 1/4 cup chopped green onions or chives

Instructions

  1. Bake the Bacon: Preheat oven to 375°F. Lay bacon on a parchment-lined baking sheet and bake until crispy, about 15 minutes. Once cooled, chop and set aside for topping.

  2. Roast the Vegetables: Increase oven temperature to 400°F. Place cauliflower and onion on a baking sheet. Drizzle with melted ghee and add garlic. Toss to coat. Roast until lightly browned around edges, about 20–25 minutes.

  3. Combine with Bone Broth: Heat chicken bone broth in a large stockpot over medium heat. Add roasted cauliflower, onion, garlic, nutmeg, sea salt, and cracked pepper. Turn off the heat and purée with an immersion blender until creamy and smooth.

  4. Serve and Garnish: Ladle soup into bowls and top with crispy bacon and green onions or chives. Enjoy warm and nourishing!
