Grilled Lemon Salmon Kabobs with Creamy Curry Yogurt Sauce

Fresh, colorful, and packed with anti-inflammatory nutrients, these Grilled Lemon Salmon Kabobs are one of our favorite summer meals. Tender chunks of wild-caught salmon are lightly marinated with lemon, garlic, and olive oil before being grilled to perfection and finished with a creamy curry yogurt sauce. Whether you're hosting friends or looking for an easy weeknight dinner, this recipe comes together in about 30 minutes and is loaded with functional nutrition benefits.

Ingredients

For the Salmon Kabobs

  • 1½–2 pounds wild-caught salmon, skin removed and cut into 1-inch cubes

  • Juice of ½ lemon

  • Zest of ½ lemon

  • 1 tablespoon extra-virgin olive oil (or avocado oil)

  • 2 teaspoons raw honey

  • ½ teaspoon garlic powder

  • ¼ teaspoon sea salt

  • ⅛ teaspoon black pepper

  • 2 lemons, thinly sliced

  • 4 metal skewers (or wooden skewers soaked in water for 30 minutes)


Creamy Curry Yogurt Sauce

  • ½ cup plain Greek yogurt (grass-fed, pasture-raised)

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons chopped fresh cilantro

  • ½ teaspoon curry powder

  • ¼ teaspoon sea salt

  • Pinch smoked paprika (optional)


Directions

Step 1: Marinate the Salmon

  • In a small bowl, whisk together the lemon juice, lemon zest, olive oil, honey, garlic powder, salt, and pepper.

  • Pat the salmon dry and cut into even-sized cubes. Toss gently with the marinade and let sit for 10–15 minutes while the grill preheats.

  • Tip: Avoid marinating longer than 15 minutes, as the lemon juice will begin to "cook" the fish and change its texture.


Step 2: Make the Curry Yogurt Sauce

  • In a small bowl, whisk together the Greek yogurt, lemon juice, cilantro, curry powder, salt, and smoked paprika until smooth. If you'd like a thinner consistency, add 1–2 tablespoons of water.

  • Refrigerate until ready to serve.


Step 3: Grill the Kabobs

  • Preheat the grill to medium-high heat (about 400°F).

  • Thread the salmon cubes onto skewers, alternating with folded lemon slices.

  • Grill over indirect heat for about 5 minutes, then carefully turn and cook another 3–4 minutes, or until the salmon flakes easily with a fork.

  • Transfer to a serving platter and drizzle generously with the curry yogurt sauce.

  • Garnish with fresh cilantro and an extra squeeze of lemon.
