Cauliflower Tabbouleh Salad with Chickpeas & Artichokes

A fresh, fiber-rich twist on a Mediterranean classic! This light and refreshing salad is packed with colorful vegetables, heart-healthy olive oil, fresh herbs, and plant-based fiber. We've swapped traditional bulgur for cauliflower rice to create a grain-free, lower-carbohydrate version that still delivers incredible flavor and nutrition. It's perfect as a side dish, light lunch, or meal prep option throughout the week.

Ingredients

Dressing

  • ¼ cup extra virgin olive oil

  • ¼ cup fresh lemon juice (or a combination of lemon and lime juice)

  • 1 garlic clove, minced

  • ½ teaspoon dried mint (or 1 tablespoon fresh mint, chopped)

  • Freshly ground black pepper, to taste

  • Pinch of sea salt, if desired


Salad

  • 3–4 cups cauliflower rice (fresh or lightly steamed and cooled)

  • 2 medium tomatoes, diced

  • ½ cup chopped scallions (including green tops)

  • 1 cup fresh parsley, finely chopped and packed

  • ½ cup cooked chickpeas, drained and rinsed

  • 1 cup quartered artichoke hearts, drained

  • 1 chopped cucumber

  • 1 chopped green bell pepper (optional)

  • ½ cup shredded carrot (optional)


Optional Garnish

  • Kalamata olives

  • Fresh parsley

  • Lemon wedges


Directions

  1. If using frozen cauliflower rice, thaw and squeeze out any excess moisture. If using fresh cauliflower rice, you can leave it raw for extra crunch or lightly steam for 2–3 minutes and allow it to cool completely.

  2. In a large bowl, whisk together the olive oil, lemon juice, garlic, mint, salt, and pepper.

  3. Add the cauliflower rice and toss well to coat. Cover and refrigerate for at least 1–2 hours to allow the flavors to develop.

  4. Just before serving, gently fold in the tomatoes, parsley, scallions, chickpeas, artichoke hearts, cucumber, bell pepper, and carrot.

  5. Taste and adjust the seasoning with additional lemon juice, salt, or pepper if needed.

  6. Garnish with Kalamata olives, fresh parsley, and lemon wedges before serving.
